Today I saw a TikTok short video in the LINE group. The anchor of "Health 2.0" Zheng Kaiyun was telling everyone that "there are two kinds of things that cannot be eaten together during the Mid-Autumn Festival." She mainly said that when foods containing salt nitric acid (scented, hot dogs, bacon, ham, etc.) meet foods containing amines (sauce, saury, twig, dried beans, buttermilk), aniniamine will form, which is a first-class carcinogen published by the WHO.
First, there are two errors in the "Aniamine is a first-class carcinogen published by the WHO" mentioned by this anchor:
First, the organization that classifies carcinogens is not WHO, but International Agency for Research on Cancer (IARC). Although IARC belongs to WHO in terms of nominal terms, its operation is actually not regulated by WHO, and its carcinogenicity for something (such as electromagnetic waves) is contrary to WHO's opinion. Can you see how cell phone calls cause cancer? The doctor said.
Secondly, IARC refers to nitrosamine as a grade 2A carcinogen, not a grade 1 carcinogen, but Zheng Kaiyun actually said, "This is true." IARC currently has 95 Level 2A carcinogens, including red meat (beef, sheep, pork, which has nothing to do with roasting). What makes people even more shocked is that IARC regards all alcoholic beverages, including beer and red wine, as first-class carcinogens. Please see the special article on carcinogen classification.
Come again, I have published 14 articles related to Agnitric acid. Can salt nitric acid cause carcinogenesis in? This is the case in this article:
"Asakine salt" is combined with "amine" to form "Asakine" under high temperature or acidic conditions, and some experiments with animals have found that "Asakine salt" can cause cancer. However, there is currently no evidence that "aniamine" can cause cancer in humans.
No matter what, because "Aniniamine" has a carcinogenic phenomenon in animals, it is generally recommended that the medical community should not often eat high-temperature roasted fragrant tangerine, bacon, ham, etc. with "Aninitric acid salt" added.
Nevertheless, it is wrong to say that "a nitroamine" is easy to form because meat contains a lot of protein. In fact, "Aniniamine" is formed because "Aninitric acid" combines with the wandering "amine", not with protein.
The content of amines in meat (whether fresh or processed) is usually not high, and the content of amines in processed meats will also decrease over time (transformed into amines). Therefore, the carcinogenic suspicion of "aniamine" processing meat products is actually over-informed. Please see The use and control of nitrate and nitrite for the processing of meat products.
In fact, I said in a 18 fragrant bones published on 2017-11-7 that the fat, salt, and calorie contained in the fragrant bones may be more worthy of attention. Also, I posted a barbecue on 2018-3-25. It also said that barbecue can produce some harmful chemical substances, which may not only cause cancer, but may also cause oxidative response, inflammation, infarct resistance, and hypertension. Therefore, it is best to process meat, especially those that are roasted with roasting.
There are three other interesting facts: (1) our saliva contains a lot of "Asia nitrite", which is of great importance to our health. (2) "Asia nitrite" and "Asia nitrite" from food are considered healthy. Please see Food sources of nitrates and nitrate: the physical context for potential health benefits and Nitrate and Nitrite in Health and Disease. (3) Studies have shown that "Asia nitrite" or "Asia nitrite" can be used to treat heart failure. In other words, the toxic drugs in the rumor may be good medicine. Please see Harnessing the Nitrate– Nitrite– Nitric Oxide Pathway for Therapy of Heart Failure With Preserved Ejection Fraction.
In short, whether it is overnight dishes or processed meat, the saying that they cause cancer because of their "salt nitric acid" is derived from entertainment caused by misunderstandings.
Regarding the health benefits of nitric acid, please also see my newly published nitric acid, which can prevent cardiovascular diseases. What is the reverse discovery of yangming Jiaotong University? .
